Creamy Oven Baked Cod Florentine Style

Ingredients
  

  • 2 5 ounce cod fillets
  • 1 teaspoon olive oil
  • 1 teaspoon Old Bay
  • 3 tablespoons butter
  • 1 red pepper diced
  • 1 onion small
  • 1 tablespoon flour
  • 3 tablespoons parmesan cheese
  • 2 cloves garlic minced
  • 1 teaspoon dijon mustard
  • 3 cups spinach fresh
  • salt and pepper to taste
  • 3/4 cup heavy cream
  • 4 lemon wedges
  • 1 tablespoon parsley to garnish

Instructions
 

  • Preheat the oven to 400 degrees. Spray a cooking pan with olive oil spray.
  • Rinse the fish, then pat dry. Season with Old Bay. Bake fish for about 14 to 16 minutes or when an internal thermometer reads 145 degrees.
  • Rinse spinach. Set aside.
  • While the fish is cooking, melt butter on medium-high heat. Add the diced red pepper and onion. Saute for about 5 minutes.
  • Sprinkle flour into the pan. Stir well. Add the parmesan cheese, garlic, and dijon mustard.
  • Next, add the spinach. Stir until it wilts. Salt and pepper to taste. Add cream.
  • Place the baked cod on a serving dish, on top of the mixture. Serve with lemon wedges. Garnish with parsley.
