Creamy Oven Baked Cod Florentine Style

- 2 5 ounce cod fillets
- 1 teaspoon olive oil
- 1 teaspoon Old Bay
- 3 tablespoons butter
- 1 red pepper diced
- 1 onion small
- 1 tablespoon flour
- 3 tablespoons parmesan cheese
- 2 cloves garlic minced
- 1 teaspoon dijon mustard
- 3 cups spinach fresh
- salt and pepper to taste
- 3/4 cup heavy cream
- 4 lemon wedges
- 1 tablespoon parsley to garnish
Preheat the oven to 400 degrees. Spray a cooking pan with olive oil spray.
Rinse the fish, then pat dry. Season with Old Bay. Bake fish for about 14 to 16 minutes or when an internal thermometer reads 145 degrees.
Rinse spinach. Set aside.
While the fish is cooking, melt butter on medium-high heat. Add the diced red pepper and onion. Saute for about 5 minutes.
Sprinkle flour into the pan. Stir well. Add the parmesan cheese, garlic, and dijon mustard.
Next, add the spinach. Stir until it wilts. Salt and pepper to taste. Add cream.
Place the baked cod on a serving dish, on top of the mixture. Serve with lemon wedges. Garnish with parsley.
